FRIED BEEF RICE WITH KACHUMBARI

Fried beef rice with kachumbari is one of the easiest meals to prepare and it doesn’t take up much of your time. I actually really loved this meal cause its beginner friendly and scrumptious.

PART ONE


FRIED BEEF RICE
INGREDIENTS:



2 cups of rice
a portion of beef
2 large onions
2 large tomatoes
4 cloves garlic
2 tablespoons mixed spices
1 teaspoon turmeric
1 tablespoon cumin seeds
soy sauce
vegetable oil


PROCEDURE
Cut your onions and garlic into very thin slices or cubes (whichever method you prefer is fine)
Grate your tomatoes (this is to avoid the tomato skins in our rice).
Soak your rice in clean water.
Bring your meat to boil until all the water is finished. Add oil and let it fry for about 2 minutes the garlic and all your spices. Pour in the onions and let it fry for a few minutes then add your tomatoes. Cover and let them cook.
Add the tomato paste, a few drops of soy sauce, a bit of water and bring to simmer.
You can now add 4 cups of water and bring to boil.
Drain the water from the rice and add it to the boiling water.
Let your rice cook until the water is gone.

SERVE WHILE HOT.



KACHUMBARI
INGREDIENTS
2 large onions
2 large tomatoes
dhania ( coriander)
1 lemon/ vinegar
salt to taste


PROCEDURE
Cut your onions into very thin slices and soak them in salty water (to get rid of the bitterness)
Slice your tomatoes into thin slice and put in a bowl together with chopped dhania.
Wash your onions thoroughly to remove the excess salt and add it to the ingredients in the bowl.
Add a pinch of salt and the juice of 1 lemon or 1 -2 tablespoons of vinegar, mix well and put it in the fridge to cool.
BEST SERVED CHILLED.
